This recipe is super simple and amazingly delicious. I made this up about 7 years ago, and it became an instant hit with my family and friends.
I constantly get asked for this recipe, and people are surprised by how simple it really is.
I always keep these ingredients on hand, and I throw it together on days when I find myself incredibly behind. My kids can’t get enough; I hope you enjoy!
Sausage Italian Soup
1 lb. Sausage
( you can use plain, Italian for more spice, or reduced fat)
1 1/2 Cup Rice
6-8 cups Beef Broth
(make it extra nutritious by making your own)
2 tsp. Ground Black Pepper
3-4 large handfuls Spinach, chopped
- Brown the sausage in large pot. You can drain the excess fat off the sausage when done but you don’t have to.
- Add the rice, beef broth (8 cups will make it more soupy which is what I prefer), and black pepper; bring to a boil and then simmer 10 minutes.
- Add spinach and simmer an additional 5 minutes, and it’s done!
NOTE: You can substitute brown rice for white; just cook it halfway before you use it in the recipe. Not as fast but more nutritious and just as delicious.
